Dice the jalapeno and red onion. If you want spicy guac leave the seeds in the jalapeno, otherwise remove them. Crumble the queso fresco into small chunks and juice the lime. Chop the cilantro.
Open the avocados and spoon them out into a bowl. Add all of the additional ingredients and lime juice. With a spoon or fork, mix the guac until roughly mixed. Add salt to taste and continue to mix.
If you want chunky guac, mix until everything is just combined and leave small chunks of avocado intact. If you prefer smooth guac, continue to mix until everything is well combined and the avocado has no chunks remaining. You could also place everything in a food processor and pulse for extra super smooth guac.
